Veggie Diet - Vegetarian Meals With a Kick
Are you a vegetarian? Getting tired of eating the same veggie meals every single day? Need something new to spice up your palette make your veggie diet a little more interesting? Sick of the same old romaine salad and tomatoes with vinaigrette dressing? Well here are some suggestions to make your veggie diet more appealing.
Sticking to your diet plan is never easy. I should know. For a couple of years now, I've been trying to eat healthier: first eliminating pork from my diet, then slowly cutting down on the beef. I admit there are days when I still succumb to the temptations of bacon and prosciutto. I have yet to mull about giving up fish and poultry but I learned that the important thing to do in going vegetarian is to not make yourself feel deprived of good food.
Whether you've been a vegetarian for a long time now, a fresh and struggling convert or someone who's simply experimenting (like me), the first thing you have to keep in mind is that a veggie diet does NOT equal boring. There are a lot of mouth-watering and easy-to-make recipes out there that will tickle your taste buds and make your friends wish they were vegetarians too!
Here's a simple recipe to help you get started:
Spicy Mushrooms Over Toast
Ingredients:
Mushrooms (halves)
Basil (finely chopped. You can use dried basil as well)
Onion (diced)
1 small red chili pepper (finely chopped. Dried chili flakes will do too)
Tomatoes (diced)
Preparation:
Sautee the mushrooms in olive oil. They brown better if you don't crowd them. When nicely browned, add the onion. Add the red chili. Finally add the tomatoes. Sprinkle the basil over the ingredients. Season as desired.
Generously spread on top of toasted bread. Bon appetit!
